TASTING NOTES

AROMAS: This wine presents an incredibly fascinating and unconventional nose. On first sniff, it might throw you off — but once you start describing the aromas, it becomes a truly delightful experience. The bouquet is perfumed in the most unexpected way, showcasing a unique blend of exotic flowers, fresh-cut ruby grapefruit, and sweet, pollen-rich waxiness. A subtle chalky note lingers in the background, accompanied by hints of dried sage and even frangipani flowers, creating a complex and intriguing aromatic profile.
PALATE: On the palate, the wine’s texture is its standout feature. Thanks to skin fermentation, it’s grippy, while the 75% whole-bunch fermentation adds a herbal edge, further accentuated by the use of wild yeasts during fermentation. These factors combine to create a striking mouthfeel that’s rich in texture but not overwhelming.
Because the wine is unfiltered, it retains a higher level of flavour and character, avoiding the muted aromas and flatness that filtration can sometimes cause. The result is a dynamic, engaging wine—like “acid jazz” for the palate—especially if you’re used to the smoother, sweeter tones of something like Chenin Blanc.
And yet, this wine is anything but chaotic. It’s balanced, complex, and expressive, with layers that unfold as it warms to room temperature: a captivating mix of oranges, ruby grapefruit, and nectarine, with exotic floral notes that grow more intense. While the exact flower is hard to pin down, it calls to mind a unique, elusive pink bloom—definitely not your standard lavender, violet, or rose.
