#190 Oro dei Sani Governo Toscana 2016 IGT
Medieval Monks, Sangiovese & Governo wines
—
—
Oro dei Sani is one of the oldest wineries in Tuscany. Back in the day it belonged to the monks of the Certosa di Firenze, so you know it’s legit. When it came to wine, monks didn’t muck about. This particular Sangiovese wine is interesting in that it employs the “governo” method, which involved adding dried grapes into the fermenting must towards the end of the fermentation. The effect of this is multifaceted; it adds richer fruit elements, higher alcohol, and encourages malolactic conversion, which in turn tempers the brightness of a high-acid grape like Sangio. Win-win.

👃🏼A superbly complicated vanguard of cherry, strawberry and mulberry , dried origanum, cured meat, hint of lavender, fresh potting soil. Give it time in the glass, and it will continue to open and evolve.

👄 On the palate, it’s fairly full-bodied, with ripe berry fruit and plum elements, couched in moderate tannins; firm enough to support the fruit. Berry elements linger nicely on the tail.
🔬 100% Sangiovese from Maremma in South West Tuscany. Matured in oak barrels for 6 months.
