If you have yet to sign up for your Monthly HanDrinksSolo Wine Subscription then you’ll have to hunt this wine down in your own time. But until then, here are my tasting notes and some technical specs:

Tasting notes:

👃🏼 White asparagus, lime leaf, lemon blossom, buchu, bruleed sugar, elderflower
👄 Quite steely, and textured. Can be full and rounded, with lashings of oak, but this less of a Jonah Hill and more kind Timothy Chalamet. White grapefruit, seville marmalade, a bit of more generous naartjie sherbet, some peach,…but such a lovely linger zingy chardonnay-like lime cordial tail, which leaves the mouth watering.

TECHNICAL SPECS

🔬 Wine of Origin Constantia. 100% Sauvignon Blanc.
A unique Sauvignon Blanc, the 2023 Barrel Fermented Sauvignon Blanc hails from carefully selected vineyard blocks on our Constantia estate. A fresh coastal breeze cools the vines, ensuring the grapes retain a bracing acidity alongside pure fruit character. The wine was fermented and aged in a combination of large (400l, 500l and 600l) French oak barrels (a few 1st, 2nd and 3rd fill but mainly older) and a concrete egg (16% of the total blend) for a total of 7 months. After maturation the wine was returned for stabilisation and filtration before bottling in November 2023
Harvested February / March 2023 | Soil type Clovelly / Oakleaf /Avalon | Age of vines 15-28 years |Yield 8 ton/ha | Alc 14.04% | Sugar: 1.6g /l |Acid: 6.4g /l | pH: 3.3
