If you have yet to sign up for your Monthly HanDrinksSolo Wine Subscription then you’ll have to hunt this wine down in your own time. But until then, here are my tasting notes & technical specs:

TASTING NOTES

👃🏼 The vanguard carries a lovely complex mix of fruit, cedar spice, cocoa, leather, and a more savoury layer of cinnamon dusted stewed prunes.
👄 The palate is medium-weighted but pleasantly juicy pure blackcurrant core, with brooding roasted black plum elements. Tannins are delightfully refined. This wine is structured, but not big. Interesting puff of white pepper spice on the tail.

TECHNICAL SPECS

🔬 Wine of origin Stellenbosch. Bottelary Hills ward. 100% Cabernet Sauvignon. Grapes are destemmed, hand sorted, and pumped into two open-top stainless steel fermenters. Only native yeasts are used, and fermentation takes place at roughly 26 °C. Fermentation was completed roughly 10 days, with manual punchdowns occurring five times a day. Eight days of extended skin maceration before pressing after which the wine was racked to barrel for 18 months of maturation in 225 L French oak barrels (30% New, balance second
and third fills).
